As many of you may already know, Rich was in Dallas Texas for a Tom Ferry mastermind the past couple days! That led to spinning off today’s Happy Hour Wednesday with a Texas twist! Did you know one of the most popular drinks in Texas is the paloma? We have that recipe for you to try today along with hot corn dip!

Paloma Drink Recipe:

Ingredients:

  • 2 and 2/3 cups tequila

  • 2 and 2/3 cups grapefruit juice

  • 1 cup lime juice

  • 1 cup water

  • 5 Tbs agave nectar (can also substitute honey or simple syrup)

  • 1/2 tsp salt

  • 10 ounces sparkling water (Topo Chico is best)

Directions:

  1. In a large pitcher, stir together the grapefruit juice, lime juice, water, and agave nectar or honey. Chill for 1 hour to combine for best flavor. If needed in a hurry, you can drink now.

  2. Stir in the tequila and salt.

  3. To serve, fill a three-quarters of your glass with ice. Pour the paloma mixture until the liquid reaches the ice level, and top with sparkling water. Garnish with a salt rim, grapefruit wedges, or lime wedges.

Corn Dip Recipe:

Ingredients:

  • 8 oz package cream cheese (softened)

  • 1 cup sour cream

  • Two 11 oz cans fiesta corn (drained)

  • 1 jalapeno (deseeded and diced)

  • 1 tsp pepper

  • ½ tsp garlic powder

  • ½ tsp paprika

  • One 8-oz package Mexican blend cheese

  • Chopped green onion ( for garnish)

  • Corn chips (for dipping)

Directions:

  1. Preheat oven to 350°F. Spray 9x13 baking dish with nonstick cooking spray.

  2. In a large bowl, combine the cream cheese and sour cream.

  3. Add fiesta corn, jalapeno, pepper, garlic powder, and paprika. Stir to combine.

  4. Fold in shredded cheese.

  5. Pour the mixture into the baking dish. Bake in the preheated oven for 25 to 30 minutes, until dip is warm and bubbly.

  6. Top with chopped green onion, if desired, and serve immediately with corn chips for dipping.
