Happy Wednesday! Today we’re featuring lasagna roll ups for our appetizer and an olive summer cup for our drink! Whip up a batch of the lasagna roll ups to take for your co-workers tomorrow after all, tomorrow is national lasagna day! Enjoy!

Summer Olive Cup Recipe:

Ingredients:

  • London dry gin 300ml

  • Sweet vermouth 200ml

  • Cointreau 100ml

  • Lemonade to serve

  • Cucumber slices or mint or strawberries or orange slices or ice to serve

Directions:

  1. Pour the first three ingredients into a large jug and stir to mix. Fill the jug with ice, then carefully top up with lemonade and serve with slices of cucumber, mint, strawberries and slices of orange.

Lasagna Roll Ups Recipe:

Ingredients:

  • Cooking spray, for pan

  • 6 lasagna noodles

  • Kosher salt

  • 2 c. ricotta

  • 1 egg

  • 1 tbsp. chopped parsley, plus more for garnish

  • Freshly ground black pepper

  • 1 c. marinara

  • 1 c. shredded mozzarella

Directions:

  1. Preheat oven to 350° and grease a large baking sheet with cooking spray. In a large pot of boiling salted water, cook noodles until al dente. Drain and lie flat on baking sheet while you prep rest of ingredients.

  2. In a medium bowl, combine ricotta, egg, and 1 tablespoon parsley. Mix until well combined then season with salt and pepper.

  3. Cut lasagna noodles in half crosswise. Spread a thin layer of ricotta mixture onto each lasagna noodle then roll up. Cut the rolled lasagna noodle in half crosswise.

  4. Place lasagna bites onto the same greased baking sheet. Spoon marinara onto each lasagna bite then sprinkle with mozzarella.

  5. Bake until the cheese has melted and the lasagna bites are warmed through, 15 to 20 minutes.

  6. Garnish with more parsley and serve warm.
